Rainbow Fruit Gummies

Today I had a special request for candy. My Little cousin has a big sweet tooth and often buys treats like this at the candy store. Upon hearing that I could indeed make candy, I became the coolest big cousin ever. After careful selection of her favourite purees, we began to cook them up with apple pectin, sugar and a few giggles.

5.5 oz Apple puree (or unsweetened apple sauce)

8 oz Fruit puree of choice

1/2 oz Pectin

28 oz Sugar

1 tsp lemon juice

Add giggles to taste

-Reduce apple puree by half, add other fruit pruee

-Mix pectin with 1/3 of sugar, add and boil

-Add the rest of sugar in two stages, returning to a boil each time

-add lemon juice and take off heat, pour into silicon mold

What we did here was make a slightly smaller recipe in three batches- mango, kiwi and strawberry. We poured them in layers in an 8" square silicon pan then allowed to set before slicing and tossing in sugar. You can make many more layers if you like. Go crazy!
